Antioxidant Activities of Fruit Wines
A review examined the antioxidant properties of fruit wines and found that bilberry, blackberry and black mulberry wines had significant antioxidant properties.
The review, conducted at the Department of Food Engineering at Ege University in Turkey evaluated the oenological colorimetric indexes, CIELAB parameters, total phenols and antioxidant activities studied in different fruit wines made from black mulberry, blackberry, quince, apple, apricot, melon, red raspberry, bilberry, sour cherry and strawberry.
The highest value of antioxidant activities and total phenolic contents were determined in bilberry, blackberry and black mulberry wines-61.8 percent; 60 percent; and 58.1 percent, respectively. Positive correlation was found between antioxidant activities and total phenols.
The review concluded that bilberry, blackberry and black mulberry wines were the most significant natural antioxidants and colorants.
